For our loyal readers, you will appreciate that whilst map continually pushes boundaries and questions the opinions perpetuated by mass media, our resolute dedication is to focus on the positive aspects of life. Subscribing to a similar ethos is the National Portrait Gallery (NPG) of London’s current Face of Fashion photographic exhibition. Here the art form and relationship between the photographer and subject is celebrated. Case in point is our front cover image of Kate Moss courtesy of NPG. It was snapped early on in her career by Corinne Day, a British photographer credited as ‘discovering’ the iconic model. Despite her tabloid-persona, Kate has contributed greatly to fashion, gracing three-hundred plus magazine covers, securing unprecedented advertising campaigns and continually inspiring a cultish following in the fashion world. The palette of colours is inspired by the French flag, with the striking red wall set against blue panelled doors, and fresh whites adding a touch of Parisian charm. Hints of the original store remain with the exquisite gilt mirrors kept from the former chemist. Now, ex-Harvey’s chef Kim Moore creates dishes a little more refined than typical cafe fare.

CAVIAR ON POTATO ROSTI
(SERVES 8)
INGREDIENTS
150g caviar
100g creme fraiche

POTATO ROSTI
800g idaho potatoes, peeled
salt and white milled pepper
1 eschalot, peeled & finely diced & sauteed in clarified butter until translucent
180g clarified butter, warmed

METHOD
–Finely grate the potatoes on a micro-plane or fine julienne.
– Place them immediately into just boiled water for one minute only, strain.
– Season with salt and pepper, add sauteed eschalot and pour in half of the warmed clarified butter.
– Pack the potato firmly into metal rings
7.5cm in diameter. Turn over and press firmly.
– Heat a heavy cast iron frying pan, add the remaining clarified butter.
– Place the rosti, still in their metal rings, into the pan and cook to a beautiful golden brown colour on both sides, remember the potato is already cooked. You can also place the rosti in the oven to crisp it evenly on both sides.
– Place the warm rosti in the centre of serving plates, add a spoonful of creme fraiche off centre, then a big dollop of wonderful caviar.

Nicola Hensel’s mixed media work on paper leaps forth and engages the viewers, embracing them in the recurring themes of love and redemption. Combining drawing and collage, Nicola utilises these themes to delve into three main threads with her vibrant exhibition at Jan Murphy Gallery. The Almanac series is about the creation of the artist’s own almanac - charting sensations and feelings, while Red Prayer is a series of smaller tableaux on red, using domestic objects to create little elegies to larger themes. The third body of work is a continuation of the pure, intimate pencil drawings from her last exhibition in 2005. Due to their fragile nature, Nicola’s works consist of collages printed on paper with archival inks. These are then painted over with a fine brush and acrylic paint.

Finnish composer Einojuhani Rautavaara’s most popular work Cantus Arcticus is presented with a blend of bird song recordings set against the live orchestra. The Queensland Conservatorium’s first-ever Director, William Lovelock, also has a chance to shine with his Concertino solo piece, set to foster appreciation of the historic musical masters.
